Serves : serve 4 Preparation
time : 7 minutes Cooking time : 6 minutes
Ingredients :
- 250g boned uncooked chicken
- 1 large fresh pineapple
- 1 green pepper, seeded and chopped
- oil
- salt
- chicken stock
- 1 tspn cornflour
- 2 tbsp brandy
- 1 tbsp soya sauce
- 1 tspn sugar
- a few canned red cherries
Preparation and Cooking Instructions
- Cut duck into thin slices; cut the pineapple into bite-sized pieces
and reserve several for garnish.
- Heat a little oil in a pan and add green pepper and pineapple. Season
with salt, add stock to cover; cook for 1 minute. Add duck, cornflour
blended with the water, sesame oil, brandy, soya sauce and sugar.
- Cook for 4 minutes and serve garnished with reserved pineapple pieces
and red cherries.
