Boil the noodles for 10 minutes then drain them well.
Heat the oil and toss onion in for ½ minute. Add the drained
cooked noodles and turn them over and over to coat them with oil.
Add the stock, seasonings and soy sauce and cook for 4-5 minutes.
Blend the cornflour with the water and stir it in, adding a little
extra stock if necessary. Boil for 1½ minutes. Turn all into
a heated serving dish and garnish with the onion 'flowers'.
Cooks notes : If using packaged noodles they will require a
little longer cooking. To make onion 'flowers' - Cut four 1½
- 2" lengths of firm green spring onion stalks; cut down one-third
way from each end. Drop them into cold iced water. The ends will spring
out into circular 'flowers'.
