Ingredients :
- ¼ recipe noodle
dough
- 1 tbsp peanut oil
- 1 slice onion
- ¾ cup chicken stock
- good pinch each of salt and sugar
- ½ tspn soy sauce
- 1 tspn cornflour
- 1 dspn cold water
- 2 onion 'flowers'
Preparation and Cooking Instructions
- Boil the noodles for 10 minutes then drain them well.
- Heat the oil and toss onion in for ½ minute. Add the drained
cooked noodles and turn them over and over to coat them with oil.
- Add the stock, seasonings and soy sauce and cook for 4-5 minutes.
- Blend the cornflour with the water and stir it in, adding a little
extra stock if necessary. Boil for 1½ minutes. Turn all into
a heated serving dish and garnish with the onion 'flowers'.
- Cooks notes : If using packaged noodles they will require a
little longer cooking. To make onion 'flowers' - Cut four 1½
- 2" lengths of firm green spring onion stalks; cut down one-third
way from each end. Drop them into cold iced water. The ends will spring
out into circular 'flowers'.
