Fried soft noodles ~ Jing Chow Mein

Ingredients :

  • ¼ recipe noodle dough
  • 1 tbsp peanut oil
  • 1 slice onion
  • ¾ cup chicken stock
  • good pinch each of salt and sugar
  • ½ tspn soy sauce
  • 1 tspn cornflour
  • 1 dspn cold water
  • 2 onion 'flowers'

Preparation and Cooking Instructions

  1. Boil the noodles for 10 minutes then drain them well.
  2. Heat the oil and toss onion in for ½ minute. Add the drained cooked noodles and turn them over and over to coat them with oil.
  3. Add the stock, seasonings and soy sauce and cook for 4-5 minutes.
  4. Blend the cornflour with the water and stir it in, adding a little extra stock if necessary. Boil for 1½ minutes. Turn all into a heated serving dish and garnish with the onion 'flowers'.
  5. Cooks notes : If using packaged noodles they will require a little longer cooking. To make onion 'flowers' - Cut four 1½ - 2" lengths of firm green spring onion stalks; cut down one-third way from each end. Drop them into cold iced water. The ends will spring out into circular 'flowers'.
