Garam Masala
Ingredients :
- 4 tbsp coriander seeds
- 2 tbsp cummin seeds
- 1 tbsp whole black peppercorns
- 2 tspn cardamom seeds (measure after removing pods)
- 4 x 7.5cm cinnamon sticks
- 1 tspn whole cloves
- 1 whole nutmeg
Preparation and Cooking Instructions
- In a small pan roast separately the coriander, cummin, peppercorns,
cinnamon and cloves. As each one starts to small fragrant turn on to
plate to cool. After roasting, peel the cardamoms, discard pods and
use only the seeds. Put all into electric blender and blend to a fine
powder. Finely grate nutmeg and mix in. store in glass jar with an airtight
lid.
Fragrant Spice Garam Masala
Ingredients :
- 3 x 7.5cm cinnamon sticks
- 2 tspn cardamom seeds ( measure after pods removed)
- 1 tspn whole cloves
- 1 tspn blades of mace or ½ nutmeg, grated
Preparation and Cooking Instructions
- Roast spices separately and grind in a blender or mortar and pestle;
add grated nutmeg, if used.
Kashmiri Garam Masala
Ingredients :
- 2 tspn cardamom seeds (measure after removing from pods)
- 1 tspn black cummin seeds
- 1 tspn whole black peppercorns
- 2 x 5cm cinnamon sticks
- ½ tspn whole cloves
- quarter of a nutmeg, grated
Preparation and Cooking Instructions
- Roast spices separately and grind to a fine powder. Add nutmeg. Store
in airtight container.
- Cooks notes : There are many versions of garam masala, some
using hot spices, such as pepper, and others only the fragrant spices.
Above are some combinations to choose from according to personal taste.
If made from good quality spices and stored in an airtight container,
garam masala will keep its flavor for months.
