Ingredients :
- 500g mussels, scrubbed and de-bearded
- ½ cup olive oil
- grated rind and juice of 2 limes or 1 lemon
- 1 tbsp white wine vinegar
- 1 tbsp finely chopped chives
- 1 clove garlic, chopped
- 1 tspn Dijon mustard or seeded mustard
- seasoning to taste
Preparation and Cooking Instructions
- Place mussels in a large saucepan. Add enough water to cover. Bring
to the boil. Reduce heat. Simmer, covered, for 3-5 minutes or until
mussels are opened - remove each mussel as it opens and discard any
unopened ones.
- Remove top half of each mussel shell. Arrange on a serving platter.
Set aside ( refrigerate if necessary).
- Whisk together oil, rind, vinegar, chives, garlic, mustard and seasoning
until well combined.
- Just before serving, drizzle dressing over mussels. Serve with crusty
bread.
- Cooks notes : To 'de-beard' a mussel, is to remove the fuzzy
piece of protruding membrane - grasp it with a knife and pull with a
knife and pull it towards you.
