Garlic and lime mussels

Serves : 4

Ingredients :

  • 500g mussels, scrubbed and de-bearded
  • ½ cup olive oil
  • grated rind and juice of 2 limes or 1 lemon
  • 1 tbsp white wine vinegar
  • 1 tbsp finely chopped chives
  • 1 clove garlic, chopped
  • 1 tspn Dijon mustard or seeded mustard
  • seasoning to taste

Preparation and Cooking Instructions

  1. Place mussels in a large saucepan. Add enough water to cover. Bring to the boil. Reduce heat. Simmer, covered, for 3-5 minutes or until mussels are opened - remove each mussel as it opens and discard any unopened ones.
  2. Remove top half of each mussel shell. Arrange on a serving platter. Set aside ( refrigerate if necessary).
  3. Whisk together oil, rind, vinegar, chives, garlic, mustard and seasoning until well combined.
  4. Just before serving, drizzle dressing over mussels. Serve with crusty bread.
  5. Cooks notes : To 'de-beard' a mussel, is to remove the fuzzy piece of protruding membrane - grasp it with a knife and pull with a knife and pull it towards you.
