Barvarian Veal with Asparagus - Bayerischer Mit Spargel

Ingredients :

  • 2 lb veal, cubed
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 1 cup carrots, chopped
  • freshly ground pepper,to taste
  • 1 tbsp parsley; chopped
  • ¼ cup fresh lemon juice
  • 2 cup beef broth
  • 3 tbsp unbleached flour
  • ½ tspn salt
  • 20 oz frozen asparagus or 2 lb fresh asparagus


Preparation and Cooking Instructions :

  1. In a Dutch oven brown the veal in hot oil.
  2. Add onion and carrots. Cook until onion is transparent. Stir in parsley.
  3. Mix lemon juice, broth, flour and seasonings until well-blended. Pour over meat.
  4. Cover and bake in preheated 325°F oven 1½ hours or until meat is tender.
  5. Add more broth if needed.
  6. Cook asparagus until tender-crisp. Stir into veal and serve immediately.
