| Peach |
Serves : about 4 cups Preparation
time : 15 minutes + standing time Cooking
time : 20-25 minutes
Ingredients :
- 6 large ripe peaches, peeled
- 1 tbsp finely chopped preserved ginger in syrup
- 2 tbsp soft brown sugar
- 2 spring onions, finely chopped
- ¼ tspn mixed spice
- 2 whole cloves
- 4 whole black peppercorns
- 2 tbsp brown vinegar
- 2 tspn soya sauce
Preparation and Cooking Instructions
- Cut peaches in half and remove stones. Roughly chop flesh.
- Combine peaches, ginger, sugar, onions, spice, cloves, peppercorns,
vinegar and soya sauce in large heavy-based pan. Stir over medium heat
until sugar dissolves. Bring mixture to boil, reduce heat and simmer,
covered, for 15 minutes or until mixture has become soft and pulpy.
Remove pan from heat and discard cloves and peppercorns.
- Spoon mixture into warm sterilized jars and seal.
- Cooks notes : Keep refrigerated until required but leave for
2 days before opening.
