Makes : about 2 cups
Ingredients :
- 2 medium-large pink grapefruit
- ¼ cup Toasted
Pumpkin Seeds
- 1 serrano or ½ jalapeño chili, stemmed and minced
- 1 medium shallot, minced
- 1 tbsp chopped cilantro leaves
Preparation and Cooking Instructions :
- With a knife, remove the peel from the grapefruit, cutting through
the white membrane all the way to the pulp. Cut the grapefruit into
¼" dice and transfer, along with the juices, to a bowl.
Add the remaining ingredients and stir to mix. Cover and chill for 30
minutes before serving.
