Ham and pineapple burger

Serves : makes 4 burgers  Preparation time : 25 minutes   Cooking time : 5-10 minutes



  Ingredients

  • 1 cup cabbage, finely shredded
  • 3 spring onions, finely sliced
  • 1 medium carrot, grated
  • 2 tbsp whole egg mayonnaise
  • 1 tspn lemon or lime juice
  • 1 tspn grated lemon or lime rind
  • 4 slices canned pineapple, reserve juice
  • 1 tbsp honey
  • 2 tspn ginger, freshly grated
  • 1 tbsp lemon or lime juice, extra
  • 1 tspn mustard powder
  • 1 tspn soft brown sugar
  • 4 large ham steaks
  • 4 flat bread rolls

  Preparation and Cooking Instructions

  1. Combine cabbage,onion, carrot, mayonnaise and lemon/lime juice in a bowl and mix well. Set aside.
  2. Place rind, ½ cup pineapple juice, honey, ginger, extra juice, mustard and sugar in large frying-pan. Bring mixture to boil, add ham steaks. Cook steaks over medium heat 3-4 minutes or until liquid is absorbed and steaks have a glazed coating. Move steaks to one side of the pan. Add pineapple rings, cook until heated through, turning once.
  3. Halve bread rolls and lightly toast each side, spread with butter if desired. Place roll bases on serving plates. On each base, place a ham steak followed by pineapple and drained cabbage mixture. Finish with a roll top.
