Honey chicken muffins

Ingredients :
- 1 cup unbleached flour
- 1 cup cornmeal
- 1 tbsp baking powder
- 1 tbsp dry mustard
- ½ tspn baking soda
- ½ tspn salt
- 2 cups skinless boneless chicken breast, cooked & chopped
- 1 cup buttermilk, at room temperature
- ¼ cup applesauce, at room temperature
- 2 egg whites, whipped
- 2 tbsp honey
Preparation and Cooking Instructions
- Preheat oven at 350°F. Prepare muffin tins.
- In a mixing bowl, combine flour, cornmeal, baking powder, mustard,
baking soda, and salt.
- In a another mixing bowl, combine chicken, buttermilk, applesauce,
egg whites, and honey.
- Mix wet ingredients with dry ingredients just until moistened.
- As a suggestion use an ice cream scoop to fill muffin tins to ¾
full. Bake for 20 minutes.
