Baked Pineapple with Walnuts ~ Ananas cotto con noci

Cooking Time : 6 to 8  Serves : 1-1/2 hours


Ingredients :

  • 4 tbsp unsalted butter, at room temperature
  • 1 pineapple skinned, cores and cut into slices, saving any juice
  • 10 walnut halves
  • ½ cup sugar
  • 2 eggs separated
  • 1 tbsp baking powder
  • ¾ cup flour
  • 1 tbsp confectioners sugar


Preparation and Cooking Instructions :

  1. Preheat the oven to 350°F.
  2. Butter a 9" springform pan with 1 tablespoon of the butter.
  3. Arrange the pineapple on the bottom of the pan. Place the walnuts in the center of the pineapples.
  4. Sprinkle the pineapple with half of the sugar.
  5. Whisk the egg yolks, remaining sugar, baking powder, flour, and the remaining butter together. Dilute with two tablespoons of pineapple juice. Beat until blended.
  6. Beat the egg whites until soft peeks form. Fold the whites into the yoke mixture until no white remains. Pour over the pineapple.
  7. Bake until golden, about 40 minutes. Remove and let cool on a wire rack.
  8. Remove the sides of the pan and flip it onto a serving dish pineapple side up. Sprinkle with confectioners sugar and serve.
