Ingredients :
- 4 tbsp unsalted butter, at room temperature
- 1 pineapple skinned, cores and cut into slices, saving any juice
- 10 walnut halves
- ½ cup sugar
- 2 eggs separated
- 1 tbsp baking powder
- ¾ cup flour
- 1 tbsp confectioners sugar
Preparation and Cooking Instructions :
- Preheat the oven to 350°F.
- Butter a 9" springform pan with 1 tablespoon of the butter.
- Arrange the pineapple on the bottom of the pan. Place the walnuts
in the center of the pineapples.
- Sprinkle the pineapple with half of the sugar.
- Whisk the egg yolks, remaining sugar, baking powder, flour, and the
remaining butter together. Dilute with two tablespoons of pineapple
juice. Beat until blended.
- Beat the egg whites until soft peeks form. Fold the whites into the
yoke mixture until no white remains. Pour over the pineapple.
- Bake until golden, about 40 minutes. Remove and let cool on a wire
rack.
- Remove the sides of the pan and flip it onto a serving dish pineapple
side up. Sprinkle with confectioners sugar and serve.
