Ingredients :
- For minted yogurt sauce : ¾ cup plain yogurt
- 1 tbsp chopped fresh mint
- ¼ tspn ground cumin
- 1 tspn soft brown sugar
For Burger :
- 500g lamb fillets
- salt and pepper
- 1 tspn ground cumin
- ¼ tspn sweet paprika
- 1 tbsp olive oil
- 30g butter
- 1-2 garlic cloves, crushed
- 1 tspn grated lemon rind
- 8 small round pitta breads, toasted
- 4 egg tomatoes, thinly sliced
- salt and cracked black pepper, extra
- green mango chutney, optional
Preparation and Cooking Instructions
- To make minted yogurt sauce : Place yogurt, mint, cumin and
sugar in a small bowl. Stir to combine.
- Trim lamb of excess fat and sinew. Combine salt, pepper, cumin and
paprika. Rub evenly over lamb. Cover and stand for 15 minutes.
- Heat oil butter in frying pan. Add garlic and lemon rind, cook 1 minute.
Add lamb fillets. Cook over medium heat 4-5 minutes or until brown and
tender. For well done lamb, continue cooking 2-3 minutes. Remove from
pan, cover with foil, stand 5 minutes.
- Place 4 pitta breads on serving plates and place tomato slices on
each. Thinly slice lamb and lay over tomato. Sprinkle with salt and
pepper. Spoon sauce, followed by remaining pitta bread. Serve with green
mango chutney if desired.
- Cooks notes : Pitta is a round flat two-layered bread. If you
like it warm, heat it briefly in a slow oven or under a warm grill.
