Greek Lamb Casserole recipe

Serves : 4  Preparation time : 30 minutes + marinating  Cooking time : 1 hour 10 minutes


Ingredients :

  • 1½ lb boned shoulder of lamb
  • 1 cup red wine
  • ¼ cup lemon juice
  • 2 tbsp brown sugar
  • 1 medium onion, chopped
  • 4 cloves garlic, crushed
  • 1 tbsp plain flour
  • 2 tspn dried oregano leaves
  • ½ cup tomato purée
  • 1 cup water
  • ¼ cup chopped parsley
  • 1¾ oz Greek fetta cheese

Preparation and Cooking Instructions

  1. Remove fat and sinew from lamb, cut into 1" cubes. Combine lamb in a large bowl with wine, juice and sugar ; cover, refrigerate for several hours ( preferable overnight ). drain lamb and discard marinade.
  2. Preheat oven to 350°F. heat oil nonstick frying pan, cook onion and garlic, stirring, for 2 minutes. Add lamb, cook 4 minutes more or until browned. Stir in flour, oregano, puree and water, bring to the boil. Spoon into an ovenproof dish, cover with foil or a lid, bake for about an hour or until lamb is tender.
  3. Serve sprinkled with chopped parsley and crumbled fetta cheese.
