Chickpeas |
Serves : makes 4 cups
Ingredients :
- ½ cup chick peas, soaked overnight
- ½ cup chopped mint or 2 tspn dried mint
- ½ cup finely chopped parsley
- 2 medium tomatoes, chopped
- ½ cup spring onions, chopped
- 1¼ cups rice, washed and drained
- 1 tspn salt
- ¼ tspn cinnamon
- ¼ tspn pepper
- ½ tspn thyme
- 1 cup olive oil
- 3 tbsp lemon juice
Preparation and Cooking Instructions
- Drain the soaked chick peas and crack them by placing in a clean cloth
and rolling with a rolling pin.
- Wash and drain the cracked chick peas, place in a bowl and mix in
all the remaining ingredients.
- Cooks notes : This stuffing contains no meat or dairy products
and is ideal for vegetarian dishes. It can supplement the filling in
all stuffed vegetables, however when used for stuffed tomatoes, omit
the chick peas.
