Lobster Eugenio Da Beca ~ Lagosta a Euginio da Beca

Serves : 4   Preparation time : 15 mins + 2-3 hours marinating  Cooking time : 40-45 minutes

Ingredients :

  • 2 small uncooked lobsters
  • 125g coconut, shredded
  • 2 onions, chopped
  • 1 clove garlic, chopped
  • ¾ cup single cream
  • 1 tspn chili powder
  • salt
  • 1½ tspn paprika
  • ½ tspn cinnamon
  • ¼ tspn nutmeg
  • 1 tspn ground coriander
  • 125g butter, melted
  • 2 tbsp lime or lemon juice

Preparation and Cooking Instructions

  1. Remove lobster flesh from shell and claws. Discard sac in head and black intestinal thread. Put flesh in a deep dish.
  2. Mix together the coconut, onions, garlic, cream, chili powder, salt, paprika, cinnamon, nutmeg and coriander. Simmer carefully in a double saucepan or a bain-marie for 30 minutes; allow to cool. Then spread over the lobster and leave in a refrigerator for 2-3 hours.
  3. Take the lobster out of its dressing and brush with melted butter. Grill until cooked, basting frequently with butter and the cream dressing. Arrange on a serving dish and keep hot. Gently reheat the remaining cream dressing in a bain-marie and whisk remaining melted butter into it a little at a time. Add lime or lemon juice and serve with the lobster.
