Lobster omelet~ Loong Har Fu Yong

Ingredients :
- 250g lobster meat
- 1 tbsp oil
- 1 tbsp onion chopped
- salt
- 6 eggs, beaten
- pinch freshly ground pepper
Preparation and Cooking Instructions
- Dice the lobster meat.
- Heat oil, add the onion and cook gently for 30 seconds. Add lobster,
cook for 2 minutes, season with salt to taste.
- Pour on eggs, mix quickly, cook for 1 minute, sprinkle with pepper,
shake the pan carefully to ensure even cooking. Cook for a further minute
and serve at once.
