Lotus seed and duck soup ~ Hein Tzu Aap Tong

Ingredients :
- 1¼ kg duck
- 9 cups water plus ¾ cups water extra
- 60g bamboo shoots
- 60g fresh mushrooms
- 30g water chestnuts
- 1 tspn cornflour
- 2 tspn sherry
- small can fresh lotus seeds
- 1 tspn sesame oil
- 1 tspn Soya sauce
- salt and pepper
Preparation and Cooking Instructions
- Bone the duck.
Simmer bones in 9 cups water for 2 hours.
- Meanwhile slice
meat finely and reserve. Shred bamboo shoots, mushrooms and water chestnuts
and mix together.
- Blend cornflour
with the ¾ cup water, add sherry and pour over duck.
- Strain stock and
return to the pan; add mushroom mixture, lotus seeds and duck mixture.
Simmer 3 minutes; stir in sesame oil and Soya sauce. Season with salt
and pepper and serve.
