Lotus seed and duck soup ~ Hein Tzu Aap Tong

Serves : 6-8  Preparation time : 22 minutes  Cooking time : 2 hours 5 minutes

Ingredients :

  • 1¼ kg duck
  • 9 cups water plus ¾ cups water extra
  • 60g bamboo shoots
  • 60g fresh mushrooms
  • 30g water chestnuts
  • 1 tspn cornflour
  • 2 tspn sherry
  • small can fresh lotus seeds
  • 1 tspn sesame oil
  • 1 tspn Soya sauce
  • salt and pepper

Preparation and Cooking Instructions

  1. Bone the duck. Simmer bones in 9 cups water for 2 hours.
  2. Meanwhile slice meat finely and reserve. Shred bamboo shoots, mushrooms and water chestnuts and mix together.
  3. Blend cornflour with the ¾ cup water, add sherry and pour over duck.
  4. Strain stock and return to the pan; add mushroom mixture, lotus seeds and duck mixture. Simmer 3 minutes; stir in sesame oil and Soya sauce. Season with salt and pepper and serve.
