Serves : 6
Ingredients :
- 6 x mangoes
- 7½ x passionfruit
- 2¼ cup sour cream
- 3 x eggs
- 3 tbsp caster sugar
- 3 tbsp flour, plain
for crumble topping :
- 1 cup flour, plain
- ½ cup brown sugar
- ½ cup coconut
- 1½ tspn grated lemon rind
- ¾ tspn cinnamon, ground
- 5 oz butter
Preparation and Cooking Instructions :
- Combine mangoes and passionfruit pulp in shallow ovenproof dish.
- Combine sour cream, sugar, eggs and flour in bowl and beat until smooth.
- Pour over mango mixture.
- Sprinkle with crumble topping and bake in a moderate oven for 30 minutes
until set and golden brown.
- For crumble topping : Combine flour, sugar, coconut,
lemon rind and cinnamon in a bowl; rub in butter until mixture resembles
fine breadcrumbs.
- Serve warm or cold with whipped cream or ice-cream.
