Mediterranean potatoes

Serves : 4-6
Ingredients :
- 6 potatoes, peeled and thinly sliced
- 1 onion, sliced
- ¼ cup olive oil
- 30g butter, melted
- 2 cloves garlic, crushed
- 1 tspn dried mixed herbs
- ¼ tspn paprika
- seasonings to taste
- 1 cup chicken stock
Preparation and Cooking Instructions
- Place potatoes and onion in a large mixing bowl. Add oil, butter,
garlic, herbs, paprika and seasonings. Toss well.
- Arrange in an ovenproof dish. Pour over stock. Bake in a moderate
oven (180°C) for 1 hour or until onion is tender.
- Cooks notes : If preferred, cook in the microwave oven on HIGH
(100%) power for 15 minutes or until tender.
