Mediterranean potatoes

Serves : 4-6

Ingredients :

  • 6 potatoes, peeled and thinly sliced
  • 1 onion, sliced
  • ¼ cup olive oil
  • 30g butter, melted
  • 2 cloves garlic, crushed
  • 1 tspn dried mixed herbs
  • ¼ tspn paprika
  • seasonings to taste
  • 1 cup chicken stock

Preparation and Cooking Instructions

  1. Place potatoes and onion in a large mixing bowl. Add oil, butter, garlic, herbs, paprika and seasonings. Toss well.
  2. Arrange in an ovenproof dish. Pour over stock. Bake in a moderate oven (180°C) for 1 hour or until onion is tender.
  3. Cooks notes : If preferred, cook in the microwave oven on HIGH (100%) power for 15 minutes or until tender.
