Mexican Wedding cookies
In the elaborate and extensive preparations surrounding a marriage, the
giving and receiving of gifts plays a major ritual role. For the bride's
part, she accepts the congratulations and collects the gifts. In return,
at the wedding celebration, she offers sweets to the guests, family and
friends, to thank them for sharing her joy and helping to provide for her
future household. Wedding cookies, also called Brides cookies, are traditional
in Mexico. Adjust the recipe to suit the number of wedding guests.

Makes : about 40 cookies
Ingredients :
- 1 cup pecans
- ½ lb butter, softened to room temperature
- 2 cups powdered sugar
- 1 tspn vanilla extract
- 2¼ cups all-purpose flour
Preparation and Cooking Instructions :
- Using food processor, chop the pecans as fine as possible. Set aside.
- Beat the butter in a large bowl until smooth and fluffy. Beat in ½
cup of the sugar and the vanilla. Add the flour in 3 or 4 batches, beating
well after each addition. Stir in the pecans to make a dry dough.
- Divide the dough into about 40 large walnut-sized balls. Arrange the
balls ¼" apart on ungreased baking sheets, cover with plastic
wrap, and set aside in the refrigerator to chill until dough is firm
but not hard, about 1½ hours.
- When ready to bake the cookies, preheat the oven to 375ºF. Bake
until the edges of the cookies are beginning to brown, about 12 minutes.
Remove from the oven and let cool on the baking sheets until the cookies
are cool enough to handle, about 15 minutes.
- Sift the remaining 1½ cups sugar onto a plate. Roll each cookie
ball in the sugar to coat thoroughly all around. Serve right away or
store in an airtight container for up to 1 week.
