Mexican rice pudding

Serves : 4 - 6


Ingredients :

  • ½ cup long-grain white rice
  • 2 cups warm water
  • 1 cup sugar
  • 2" piece cinnamon stick
  • 4 cups milk
  • ½ cup raisins
  • 2 egg yolks, beaten
  • 1 tspn vanilla extract


Preparation and Cooking Instructions :

  1. Place the rice and water in a bowl and set aside to soak for 15 minutes. Drain in a colander and rinse with cold water.
  2. Combine the sugar, cinnamon, and milk in a medium saucepan.
  3. Bring to the boil and stir in the rice.
  4. Reduce heat, cover, and cook over low heat until the rice is tender but the mixture is still quite liquid, about 20 minutes.
  5. Stir in the raisins, egg yolks, and vanilla.
  6. Cook, uncovered, just until the pudding begins to boil again.
  7. Remove from the heat right away. Serve warm or chilled.
