Mexican rice pudding

Serves : 4 - 6
Ingredients :
- ½ cup long-grain white rice
- 2 cups warm water
- 1 cup sugar
- 2" piece cinnamon stick
- 4 cups milk
- ½ cup raisins
- 2 egg yolks, beaten
- 1 tspn vanilla extract
Preparation and Cooking Instructions :
- Place the rice and water in a bowl and set aside to soak for 15 minutes.
Drain in a colander and rinse with cold water.
- Combine the sugar, cinnamon, and milk in a medium saucepan.
- Bring to the boil and stir in the rice.
- Reduce heat, cover, and cook over low heat until the rice is tender
but the mixture is still quite liquid, about 20 minutes.
- Stir in the raisins, egg yolks, and vanilla.
- Cook, uncovered, just until the pudding begins to boil again.
- Remove from the heat right away. Serve warm or chilled.
