Mussels with chili crumb topping recipe

Serves : makes 24
Ingredients :
- 24 small mussels
- ½ cup water
- 1 cup dry white wine
- 2 oz butter
- 1 tbsp ground cumin
- 3 cloves garlic, crushed
- 3 small fresh red chilies, chopped
- ¼ cup fresh coriander leaves, chopped
- ½ cup stale breadcrumbs
Preparation and Cooking Instructions
- Scrub mussels, remove beards. Combine water and wine in large pan,
bring to boil; add mussels, cook, covered, about 3 minutes or until
shells open; drain. Loosen mussels in shells; discard half of each shell.
- Meanwhile, heat butter in pan, add cumin, garlic and chilies, cook,
stirring, until fragrant. Stir in remaining ingredients. Sprinkle over
mussels, grill topping until browned.
- Cooks notes : This can be prepared several hours ahead. Store
covered in the refrigerator.
