Mussels with chili crumb topping recipe

Serves : makes 24


Ingredients :

  • 24 small mussels
  • ½ cup water
  • 1 cup dry white wine
  • 2 oz butter
  • 1 tbsp ground cumin
  • 3 cloves garlic, crushed
  • 3 small fresh red chilies, chopped
  • ¼ cup fresh coriander leaves, chopped
  • ½ cup stale breadcrumbs

Preparation and Cooking Instructions

  1. Scrub mussels, remove beards. Combine water and wine in large pan, bring to boil; add mussels, cook, covered, about 3 minutes or until shells open; drain. Loosen mussels in shells; discard half of each shell.
  2. Meanwhile, heat butter in pan, add cumin, garlic and chilies, cook, stirring, until fragrant. Stir in remaining ingredients. Sprinkle over mussels, grill topping until browned.
  3. Cooks notes : This can be prepared several hours ahead. Store covered in the refrigerator.
