Mustard with White Wine and Thyme

Makes : 1 cup


Ingredients :

  • 30g black or brown mustard seeds
  • 75g yellow mustard seeds
  • ½ cup white wine vinegar
  • ½ cup white wine
  • ¼ cup honey
  • 1 tbsp lemon juice
  • 1 tspn thyme leaves
  • salt and cracked black pepper


Preparation and Cooking Instructions :

  1. Place the mustard seeds in a nonmetallic bowl and pour over the vinegar and wine. Cover and stand overnight.
  2. Place the mustard seed mixture in a small food processor or mortar and pestle with the honey, lemon juice, thyme, salt and pepper. Grind the mixture until almost smooth. Spoon into hot sterilized jars and seal.
