Noodle Dough ~ Dan Min

Ingredients :

  • 500g all purpose flour
  • good pinch salt
  • 4 eggs
  • cold water

Preparation and Cooking Instructions

  1. Sift the flour and salt on to a pastry board.
  2. Make a depression in the center and drop in the eggs and a little cold water.
  3. Gradually work the mixture together with the handle of a wooden spoon to form a very stiff dough. Gather it into a ball.
  4. To prevent sticking, dust the board with flour or cornflour and knead the dough very well with the heels of the hands until firm but pliable and close textured and dry rather than moist.
  5. Roll out the dough in a long thin sheet. Fold over repeatedly and cut into thin strips about ¼" wide.
  6. The length will depend on the space you have in which to roll out the dough in the first place.
  7. Cooks notes : This is the basic recipe for noodles. The number of servings depends on the dish in which the noodles are used.
