Normandy chicken recipe

Ingredients :
- 20 chicken tenderloins or 4 breast fillets
- 1 tbsp olive oil
- 1 clove garlic, crushed
- 4 green apples
- 1¾ oz butter
- 2 tbsp lemon juice
- 1 tbsp brown sugar
- ¼ cup brandy
- ¼ cup cream
- 4 slices prosciutto
- ¼ cup chopped fresh parsley
Preparation and Cooking Instructions
- Trim the chicken of any fat or sinews, place in a dish and coat with
the oil and garlic.
- Peel, core and cut each apple into 8 wedges. Melt the butter in a
pan and add the apple, juice and sugar. Cook over medium heat for 25-30
minutes, turning occasionally, until caramelized.
- Add the brandy. Heat for 30 seconds, then, if using gas, move the
pan to the side of the flame and tilt until the liquor catches. If using
electricity, light with a long match. ( Take care and never pour
the liquor directly from the bottle ) When the flames subside, stir
in the cream.
- Dry-fry the prosciutto until crisp, then break into large pieces.
Heat a heavy-based pan and cook the chicken on both sides until browned
and cooked through. Serve with the apple, prosciutto and parsley sprinkled
over.
