Olive pepperoni bread with chili parmesan butter

Ingredients :

  • 1 tbsp olive oil
  • 1 clove garlic, crushed
  • 1 small onion, chopped
  • 2 tbsp finely shredded basil
  • 2 tspn cracked black pepper
  • 1 tspn dried crushed chilies
  • ½ cup seedless black olives, chopped
  • 80g pepperoni sausage, chopped
  • 1 cup self-raising flour
  • ¼ cup finely grated parmesan cheese
  • 4 eggs, lightly beaten
  • 80g butter, melted
    for chili parmesan butter :
  • 125g butter
  • 1 tspn lemon juice
  • 1 tspn sambal oelek
  • 2 tspn chopped fresh parsley
  • 1½ tbsp finely grated parmesan cheese

Preparation and Cooking Instructions

  1. Grease 8cm x 26cm bar pan, place strip of baking paper to cover base and extend over 2 opposite sides. Heat oil in pan, add garlic and onion, cook, stirring, until onion is soft. Add basil, pepper, chilies, olives and pepperoni, cook, stirring, 2 minutes; then cool for 5 minutes.
  2. Sift flour into bowl, add pepperoni mixture, cheese, eggs and butter; mix well. Spread mixture into prepared pan. Bake in moderately hot oven about 40 minutes or until lightly browned and cooked through. Turn onto wire rack to cool. Serve with chili parmesan butter.
  3. To make chili parmesan butter : Beat butter and juice in small bowl with electric mixer until light and fluffy. Add remaining ingredients, beat until combined.
