Ingredients :
- 175g butter
- 1¼ cups sugar
- 1 egg
- 2 cups plain flour
- 1½ tspn baking powder
- 1 tbsp cocoa powder
- ¾ cup candied orange rind, finely chopped
- 1 cup chocolate melts
Preparation and Cooking Instructions :
- Preheat the oven to moderately hot 180°C.
- using a food processor, cream together the butter and sugar until
it turns a nice white color. Add the egg and continue to beat, then
add the sifted flour, baking powder and cocoa and combine well.
- Using a wooden spoon, mix through the orange and the chocolate melts.
- Roll into tablespoon-sized balls and place onto a lightly greased
paper-lined tray. Lightly press down with a fork and bake in the oven
for 20 to 25 minutes or until cooked through to the center.
- Remove from oven and cool on a cake rack.
