Oven-baked Salmon with garlic and lentils recipe

Serves : 4
Ingredients :
- for the lentils : 1 tbsp olive oil
- zest and juice of 1 orange
- 6 oz green lentils
- 1 small onion, stuck with 1 clove
- bouquet garni
for the salmon :
- 4 salmon steaks
- 2 tbsp olive oil
- 2 cloves garlic, chopped
- 2 tbsp chopped parsley
- zest of 1 orange
Preparation and Cooking Instructions :
- Whisk the oil and orange juice together, stir in the zest, season
well and set aside.
- Put the lentils, onion and bouquet garni into a pan. Cover with water,
bring to the boil and simmer for 5 minutes or until they are tender.
Drain. Discard the onion and bouquet garni. Stir the oil and orange
juice mixture into the lentils. Keep warm.
- Preheat oven to 180ºC / 350ºF.
- To prepare the salmon : Pour the oil into an ovenproof dish. Mix in
the garlic, cover and put in the oven for 10 minutes or until oil is
sizzling. Sprinkle with the parsley and orange zest. Add the salmon
steaks, turning them over to coat with oil. Cover and return to oven
for 8 - 10 minutes or until salmon is just cooked.
- Transfer lentils to a serving dish. Top with the salmon steaks and
pour the garlic flavored juices over them.
