Oven-roasted chicken with garlic and potatoes recipe

Ingredients :
- 2 lb 6½ oz chicken pieces
- 4 floury potatoes, unpeeled and cut into large chucks
- 2 tbsp roughly chopped fresh rosemary
- 1 tbsp fresh lemon thyme leaves
- ½ cup olive oil
- 3 tbsp chicken stock
- 1 whole head of garlic, broken into cloves
Preparation and Cooking Instructions
- Preheat the oven to moderately hot 400°F. Place the chicken, potatoes,
herbs, oil and plenty of salt and pepper in a heavy-based baking pan.
- Toss well and bake for 30 minutes, turning regularly and brushing
the stock over the chicken to moisten. Scatter the garlic over the top
and bake for a further 15-20 minutes.
- Serve the chicken with the garlic, potatoes and the juices and oil
poured over.
