Oven-roasted chicken with garlic and potatoes recipe

Serves : 4  Preparation time : 35 minutes  Cooking time : 55 minutes


Ingredients :

  • 2 lb 6½ oz chicken pieces
  • 4 floury potatoes, unpeeled and cut into large chucks
  • 2 tbsp roughly chopped fresh rosemary
  • 1 tbsp fresh lemon thyme leaves
  • ½ cup olive oil
  • 3 tbsp chicken stock
  • 1 whole head of garlic, broken into cloves

Preparation and Cooking Instructions

  1. Preheat the oven to moderately hot 400°F. Place the chicken, potatoes, herbs, oil and plenty of salt and pepper in a heavy-based baking pan.
  2. Toss well and bake for 30 minutes, turning regularly and brushing the stock over the chicken to moisten. Scatter the garlic over the top and bake for a further 15-20 minutes.
  3. Serve the chicken with the garlic, potatoes and the juices and oil poured over.
