Pacific prawns and black soya bean ~ Dow See Har Kow

Serves : 3 - 4  Preparation time : 5 minutes  Cooking time : 4 minutes

Ingredients :

  • 5 - 6 frozen Pacific prawns
  • tiny pinch black pepper
  • pinch each sugar and salt
  • 2 tbsp peanut oil
  • 3 crushed thin slices fresh ginger
  • 1 clove garlic, crushed
  • 2 tbsp canned black soya beans
  • ¾ cup chicken stock
  • 1 tspn soy sauce
  • 1 tspn cornflour
  • 1 dspn water
  • 1 onion 'flower'
  • parsley sprigs

Preparation and Cooking Instructions

  1. Halve the shelled prawns and remove the black intestinal lines.
  2. Cut the prawns diagonally into ½ - ¾" pieces. Sprinkle with the pepper, sugar and salt and work them well in.
  3. Heat the peanut oil. Add the ginger and garlic, cook till pale gold color and then discard. Add the beans and cook for less than ½ minute, tossing and turning them. Add the prawns and cook all for 2 minutes, moving them about. Add the hot stock, soy sauce and cornflour blended with the water. Boil for 1-1½ minutes.
  4. Turn into suitable heated dish and garnish with the onion flower and parsley.
  5. Cooks notes : To make onion 'flowers' : Cut four 1½ - 2" lengths of firm green spring onion stalks; cut down one-third way from each end. Drop them into cold iced water. The ends will spring out into circular 'flowers'.
