Paprika Rice salad recipe

Ingredients :

  • 5 oz long grain rice
  • 1 red pepper, seeded and quartered
  • 1 tbsp oil
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 tspn paprika
  • 2 tspn tomato purée
  • juice of 1 lemon
  • 4 tbsp thick plain yogurt
  • ½ cup mayonnaise
  • 1 crisp lettuce
  • 4 x 4 - 5 oz pieces salmon fillet, poached and chilled


Preparation and Cooking Instructions :

  1. Cook the rice as per packet directions. Finely chop ¾ of the pepper. Heat the oil and sauté the onion and garlic until soft. Add the paprika and tomato purée and cook, stirring, for 1 minute, then add the lemon juice and 3 tbsp water. Bring to the boil, then simmer for 2 minutes. Remove from the heat and stir into the rice.
  2. Roughly chop the remaining ¼ pepper. Purée in a blender or food processor. Add the yogurt and blend. Stir the pepper and yogurt into the mayonnaise and season to taste.
  3. Shred the lettuce and arrange it in the center of a large serving dish. Spoon the salmon onto the bed of lettuce and surround it with the rice. Pour the sauce over the fish.
