Pecan Brownies

Ingredients :

  • 130g butter
  • 1 cup caster sugar
  • 1 egg
  • 1¾ cups plain flour
  • 1 tspn baking powder
  • 1 tbsp cocoa powder
  • Dark chocolate for icing
  • 1 cup pecans


Preparation and Cooking Instructions :

  1. Preheat the oven to 180°C.
  2. Using a food processor, cream the butter and sugar together until it becomes very light. Add the egg and continue to beat well.
  3. Sift the flour, baking powder and cocoa into the mix and combine well.
  4. Roll into golf-ball size balls and place on a lightly greased paper-lined baking sheet.
  5. Bake for 14 to 16 minutes or until slightly firm and cooked through.
  6. Remove from oven and cool.
  7. When room temperature, simply melt some dark chocolate in the microwave and spoon a little over each brownie and top with a pecan.
