Pepper Steak

Ingredients :
- 6 fillets, rump or sirloin steak
- 50g butter
- 1 clove garlic, crushed
- 1 onion, chopped
- 3 tbsp plain flour
- ¼ cup dry sherry or brandy
- 1 cup beef stock
- 2 tbsp green peppercorns
- ½ cup cream
- parsley, to garnish
Preparation and Cooking Instructions
- Trim meat of excess fat. Heat butter in a frying pan. Add garlic and
onion, cook 1 minute. Add steaks and cook over high heat 2 minutes on
each side; remove from pan. Remove pan from heat and stir flour through
pan juices. Return pan to heat and cook until flour browns.
- Pour in brandy and stock, stir until mixture comes to the boil; reduce
heat and simmer 5 minutes. Add peppercorns and cream and stir, crushing
peppercorns lightly with a spoon.
- Return steaks to sauce and cook about 7-12 minutes.
