Pepper Steak

Serves : 6  Preparation time : 15 minutes  Cooking time : 15 minutes

Ingredients :

  • 6 fillets, rump or sirloin steak
  • 50g butter
  • 1 clove garlic, crushed
  • 1 onion, chopped
  • 3 tbsp plain flour
  • ¼ cup dry sherry or brandy
  • 1 cup beef stock
  • 2 tbsp green peppercorns
  • ½ cup cream
  • parsley, to garnish

Preparation and Cooking Instructions

  1. Trim meat of excess fat. Heat butter in a frying pan. Add garlic and onion, cook 1 minute. Add steaks and cook over high heat 2 minutes on each side; remove from pan. Remove pan from heat and stir flour through pan juices. Return pan to heat and cook until flour browns.
  2. Pour in brandy and stock, stir until mixture comes to the boil; reduce heat and simmer 5 minutes. Add peppercorns and cream and stir, crushing peppercorns lightly with a spoon.
  3. Return steaks to sauce and cook about 7-12 minutes.
