Pepperoni, chili and basil mushrooms

Serves : makes 24


Ingredients :

  • 24 large button mushrooms
  • 1 tbsp olive oil
  • 1 small leek, chopped
  • 3 cloves garlic, chopped
  • 100g pepperoni sausage, chopped
  • 1 cup stale breadcrumbs
  • 2 cups firmly packed fresh basil leaves
  • ¼ cup finely grated parmesan cheese
  • 2 tbsp olive oil, extra

Preparation and Cooking Instructions

  1. Remove stems from mushrooms. Heat oil in pan, add leek, garlic and pepperoni, cook, stirring, until leek is soft. Add breadcrumbs, cook, stirring, until breadcrumbs are lightly browned and crisp. Blend or process basil, nuts, chilies, cheese and extra oil until smooth.
  2. Combine pepperoni mixture and basil mixture in bowl; mix well. Spoon mixture into mushrooms, place mushrooms on oven tray. Bake in moderate oven about 10 minutes or until heated through. Top with parmesan cheese and extra pine nuts, if desired.
