Ingredients :

  • 1 cup self-raising flour
  • 2 tbsp sugar
  • ¼ tspn bicarbonate of soda
  • ½-¾ cup milk
  • ½ tspn lemon juice or vinegar
  • 1 egg, lightly beaten
  • 30g butter, melted
  • extra melted butter

Preparation and Cooking Instructions

  1. Sift flour, sugar and soda into a medium size bowl. Add juice or vinegar to the milk to sour it; allow to stand 5 minutes.
  2. Make well in center of dry ingredients and add the egg, ½ cup milk and the butter; mix to form a smooth batter. If batter is too thick to pour from the spoon, add remaining milk.
  3. Brush base of frying pan lightly with melted butter. Drop 1-2 tbsp of mixture onto base of pan about 2cm apart. Cook over medium heat 1 minute or until underside is golden.
  4. Turn over and cook other side. Remove from pan; repeat with remaining mixture. Serve warm with butter pat or curls.
