Pork and Chicken en adobo ~ Adobong manok at baboy

Ingredients :
- 1lb lean pork, cut into 2" cubes
- 2½ lb chicken, cut in small pieces
- 5 cloves garlic, finely chopped
- 2-3 small bay leaves
- 4 tbsp vinegar
- salt and pepper, to taste
- boiling water
- 2 tbsp butter or oil, if needed
- 1¼ cups coconut cream
Preparation and Cooking Instructions
- Place the pork and chicken in a casserole, with the garlic, bay leaves,
vinegar, salt and pepper. Leave to stand for 15 minutes, stirring from
time to time, to impregnate the meat with the seasoning. Add just enough
boiling water to cover the ingredients, cover, and simmer until the
water evaporates. If the pork does not render sufficient fat, add butter
or oil and continue to cook until the pork and the chicken are uniformly
browned on all sides.
- When cooked, gently heat the coconut cream and stir into the casserole.
Serve with boiled rice.
- Cooks notes : This kind of braising is a favorite method of cooking
in the Philippines and is applied to fish, meat and poultry.
