Pork with persimmon sauce

Serves : 4   Preparation time : 30 minutes + 20 minutes standing  Cooking time : 20 minutes


Ingredients :

  • 8 oz lean pork
  • salt
  • 2 dried mushrooms
  • 8 oz bean sprouts
  • 2 young carrots
  • 4 tbsp vinegar
  • 12 oz persimmons
  • 2 tspn sugar

Preparation and Cooking Instructions

  1. Cut pork into bite sized slices, sprinkle with pinch of salt, leave stand for 5 minutes, boil in enough water to cover until tender, and drain. Soak mushrooms in water for 15 minutes, remove and discard stems, and cut into strips about the thickness of bean sprouts.
  2. Boil bean sprouts in lightly salted water, and drain. Cut carrots into similar strips, sprinkle with salt and leave to soften, then drain off all liquid. Mix bean sprouts, mushrooms and carrots, add 1 tbsp vinegar, stir, and drain off excess liquid. Add pork, and mix. Peel persimmons, remove seeds if any, mash pulp thoroughly, or put through a blender. Add remaining vinegar, sugar and salt to taste. Blend well, pour over pork and vegetables, mix and serve.
