Potato and bacon spread

Ingredients :
- 3 cloves garlic, peeled
- ½ tspn salt
- 4 large potatoes, peeled and boiled until tender in lightly salted
water
- ½ cup olive oil
- 1 tbsp white wine vinegar
- 1 tbsp lemon juice
- ¾ cup cooked bacon, chopped
- ½ cup fresh basil, chopped
- salt and pepper, to taste
Preparation and Cooking Instructions
- Crush the garlic and pound it in a mortar with the salt.
- Mash the potatoes with milk and transfer to a food processor.
- Whisk together the oil, vinegar and lemon juice in a small jug.
- With the processor running, gradually add the pounded garlic.
- Pour in the oil mixture in a slow steady stream, processing for 1-2
minutes.
- Finally add the bacon and basil. Season to taste with salt and black
pepper.
