Potato and bacon spread

Ingredients :

  • 3 cloves garlic, peeled
  • ½ tspn salt
  • 4 large potatoes, peeled and boiled until tender in lightly salted water
  • ½ cup olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • ¾ cup cooked bacon, chopped
  • ½ cup fresh basil, chopped
  • salt and pepper, to taste

Preparation and Cooking Instructions

  1. Crush the garlic and pound it in a mortar with the salt.
  2. Mash the potatoes with milk and transfer to a food processor.
  3. Whisk together the oil, vinegar and lemon juice in a small jug.
  4. With the processor running, gradually add the pounded garlic.
  5. Pour in the oil mixture in a slow steady stream, processing for 1-2 minutes.
  6. Finally add the bacon and basil. Season to taste with salt and black pepper.
