Potato cake

Serves : 4-6  Preparation time : 20 minutes  Cooking time : 1 hour

Ingredients :

  • 8 medium potatoes
  • 30g butter
  • 2 tbsp olive oil
  • 1 clove garlic, crushed
  • ½ tspn ground pepper
  • 2 cups dried breadcrumbs
  • 1 cup grated cheddar cheese
  • ½ cup grated parmesan cheese

Preparation and Cooking Instructions

  1. Preheat oven to 180°C. Brush a deep 20cm springform tin with melted butter. Line base and sides with greased paper. Peel potatoes and slice thinly.
  2. In a small pan heat butter, oil, garlic and pepper. Overlap slices of potato over the base of tin. Brush with butter mixture. Sprinkle with mixed breadcrumbs and cheese. Continue layering potatoes, butter mixture and cheese mix, ending with the cheese mixture. Press down firmly with hand.
  3. Bake for 1 hour or until golden brown on top. Serve warm.
