Ingredients :
- 3 medium potatoes, peeled
- ¾ cup water
- 50g butter
- ¾ cup plain flour
- 2 eggs, lightly beaten
- 1 cup grated Gruyére cheese
- 2 spring onions, chopped
- ½ tspn nutmeg
- vegetable oil
Preparation and Cooking Instructions
- Cook potatoes in boiling water until tender; drain, mash and set aside.
- Place water and butter into a pan, bring to the boil, add flour and
stir over low heat. Allow mixture to cool slightly. Beat in eggs a little
at a time. Transfer mixture to medium bowl.
- Combine potato and egg mixtures, add cheese, spring onions and nutmeg.
- Heat oil in a deep pan. Gently lower heaped tablespoons of mixture
into hot oil and cook over medium high heat 5 minutes or until puffed
and golden. Drain on absorbent paper and serve immediately.
