Potato puffs

Serves : 6  Preparation time : 30 minutes  Cooking time : 15 minutes

Ingredients :

  • 3 medium potatoes, peeled
  • ¾ cup water
  • 50g butter
  • ¾ cup plain flour
  • 2 eggs, lightly beaten
  • 1 cup grated Gruyére cheese
  • 2 spring onions, chopped
  • ½ tspn nutmeg
  • vegetable oil

  Preparation and Cooking Instructions

  1. Cook potatoes in boiling water until tender; drain, mash and set aside.
  2. Place water and butter into a pan, bring to the boil, add flour and stir over low heat. Allow mixture to cool slightly. Beat in eggs a little at a time. Transfer mixture to medium bowl.
  3. Combine potato and egg mixtures, add cheese, spring onions and nutmeg.
  4. Heat oil in a deep pan. Gently lower heaped tablespoons of mixture into hot oil and cook over medium high heat 5 minutes or until puffed and golden. Drain on absorbent paper and serve immediately.
