Prawn Croustade recipe

Ingredients :
- ½ loaf unsliced bread
- ½ cup olive oil
- 1 clove garlic
Filling
- 500g green prawns
- 1½ cups water
- 2 slices lemon
- 50g butter
- 6 spring onions
- 3 tbsp plain flour
- ground pepper
- 1 tbsp lemon juice
- 1 tspn dried dill
- ¼ cup cream
- parsley and lemon, to garnish
Preparation and Cooking Instructions
- Preheat oven to 210°C. Remove crust from bread, cut into 5cm thick
slices. Cut each slice diagonally to form a triangle. Cut a 1cm border
around the bread slices, scoop out center, taking care to leave a base.
This gives a cavity in which to place the prawn filling. Heat oil and
garlic together in a small pan, brush all over bread cases. Bake 10
minutes.
- To make filling : Shell and devein prawns and chop roughly.
Place in a small pan and cover with water. Add lemon slices, simmer
15 minutes, strain and reserve liquid.
- Heat butter in a small pan, cook chopped spring onions until soft,
add flour and pepper. Stir over low heat 2 minutes. Gradually add reserved
prawn liquid. Stir constantly over medium heat 5 minutes or until sauce
boils and thickens. Add lemon juice, dill, cream and prawns and heat
gently for approximately 5 minutes.
- To serve, spoon filling into bread cases, garnish with parsley and
lemon.
