Ingredients :
- 8 large green prawns
- 2 tbsp lemon or lime juice
- 1 tbsp sesame seeds
- 1½ cups fresh white breadcrumbs
- 2 tbsp finely chopped fresh coriander
- 1 egg, lightly beaten
- 2 tspn chili sauce
- plain flour for dusting
- ¼ cup olive oil
- ¼ cup whole egg mayonnaise
- 1 spring onion, finely chopped
- 1 tbsp tomato sauce
- 1 tspn Worcestershire sauce
- chili sauce, extra
- 1 tbsp lemon or lime juice, extra
- 4 hamburger buns, halved
- rocket lettuce
- ½ small bunch watercress
- 1 firm ripe avocado, peeled and thinly sliced
- 1 tspn cracked pepper
Preparation and Cooking Instructions
- Peel prawns and discard shells. Cut prawns lengthwise down the back
almost all the way through. Remove vein. Flatten prawns slightly. Combine
prawns and lemon or lime juice; mix well.
- Combine sesame seeds, breadcrumbs and coriander on a sheet of greaseproof
paper. Combine egg and chili sauce in a bowl. Dust prawns lightly in
flour; shake off any excess. Dip prawn in egg mixture and then press
firmly in breadcrumb mixture to coat. Place prawns on tray, cover, refrigerate
10 minutes.
- Heat oil in frying pan. Add prawns and cook over medium heat 2-3 minutes
each side. Remove from pan, drain on paper towels. Combine mayonnaise,
spring onion, tomato and Worcestershire sauces, extra chili sauce and
extra lemon or lime juice in bowl.
- Toast and butter each bun lightly. Place bun bases on 4 serving plates.
On each base place rocket, watercress and avocado. Sprinkle with the
cracked pepper. Add 2 prawns, some cocktail sauce and finally a bun
top.
