Quick-fried ribbon of duck ~ Chiang Pao Ya Ssu

Ingredients :
- 350g cooked or smoked duck
- 2-3 sticks celery
- 1 small leek
- 1 sweet red pepper
- 2 tspn dried chili peppers
- 2 cloves garlic
- 50g lard
- 1 tbsp fermented black beans, soaked for 1 hour
- 1½ tspn castor sugar
- 1 tbsp soy sauce
- 1 tbsp vinegar
Preparation and Cooking Instructions
- Slice the duck into matchstick-thin strips. Trim the celery and leek
and cut into similar-sized pieces. Remove and discard the seeds from
the red pepper and chili peppers. Cut into thin strips. Crush the garlic.
- Heat the lard in a frying-pan. Sauté the chili peppers in it
for 1 minute to flavor the oil. Remove and discard the peppers. Add
celery, leek, garlic, sweet pepper and black beans. Stirfry over high
heat for 1 minute. Add the duck, sugar and soy sauce. Continue to stirfry
fro 1 minute. Finally, add the vinegar and stirfry quickly for 10 seconds.
