Ingredients :
- 60g butter
- 1 medium (150g) onion, sliced thinly
- 100g ham, sliced thinly
- 2 cups (300g) shelled fresh peas (about 800g fresh peas in the pod)
- 1.25 litres (5 cups) salt-reduced chicken stock
- 1¼ cups (250g) arborio rice
- 2 tbsp coarsely chopped fresh parsley
- ¾ cup (60g) finely grated parmesan cheese
- freshly ground black pepper
Preparation and Cooking Instructions :
- Heat the butter in a medium saucepan, add onion and ham ; cook, stirring,
until the onion is soft but not colored.
- Add the peas and ½ cup (125ml) of the stock ; simmer, covered,
for 5 mins.
- Add the remaining stock ; bring to the boil. Stir in the rice ; simmer,
stirring occasionally, for about 15 minutes or until the rice is just
tender.
- Remove the rice from the heat ; stand for 3 minutes. Stir in the parsley
and parmesan and season to taste with pepper.
