Roast Lemon Lamb

Ingredients :
- 1.7kg leg lamb
- 4 cloves garlic, sliced
- ¼ cup olive oil
- rind and juice of 2 lemons
- ¼ cup chopped fresh oregano
- sea salt
- freshly ground black pepper
- 30g butter
Preparation and Cooking Instructions
- Place lamb on a rack in a baking dish. Cut small slits over surface
of lamb. Insert garlic slices in slits.
- Combine oil, lemon rind and juice, and oregano. Rub over lamb. Sprinkle
with salt and pepper.
- Bake in a moderate oven (180°C) for 1 hour. Dot with butter. Return
to oven for a further 30 minutes or until cooked to your liking.
- Cooks notes : Serve with Mediterranean potatoes and salad or
steamed vegetables.
