Roast Lemon Lamb

Ingredients :

  • 1.7kg leg lamb
  • 4 cloves garlic, sliced
  • ¼ cup olive oil
  • rind and juice of 2 lemons
  • ¼ cup chopped fresh oregano
  • sea salt
  • freshly ground black pepper
  • 30g butter

Preparation and Cooking Instructions

  1. Place lamb on a rack in a baking dish. Cut small slits over surface of lamb. Insert garlic slices in slits.
  2. Combine oil, lemon rind and juice, and oregano. Rub over lamb. Sprinkle with salt and pepper.
  3. Bake in a moderate oven (180°C) for 1 hour. Dot with butter. Return to oven for a further 30 minutes or until cooked to your liking.
  4. Cooks notes : Serve with Mediterranean potatoes and salad or steamed vegetables.
