Serves : 4-6
Ingredients :
- 6 unpeeled cloves garlic
- 12 baby new potatoes, halved
- 1 medium red pepper, quartered
- 1 medium green pepper, quartered
- 1 medium yellow pepper, quartered
- 6 small onions, quartered
- 3 small zucchini, chopped
- 8 baby yellow squash, halved
- 1½ tbsp olive oil
- 1½ tbsp hot chili sauce
- 2 tspn cracked black pepper
For garlic sauce :
- 2 cloves garlic, chopped
- ½ cup sour cream
- 2 tbsp cream
- ¼ cup firmly packed fresh basil leaves
- 2 tspn hot English mustard
- 1 tbsp hot water
Preparation and Cooking Instructions
- Combine garlic and vegetables with combined oil, sauce and pepper
in large bowl; mix well.
- Spread vegetable mixture in single layers into 2 baking dishes. Bake,
uncovered, in moderate oven about 40 minutes or until vegetables are
tender, stirring twice during cooking. Serve with garlic sauce.
- To make garlic sauce : Blend or process all ingredients until
smooth.
