Roasted chili vegetables with garlic sauce

Serves : 4-6


Ingredients :

  • 6 unpeeled cloves garlic
  • 12 baby new potatoes, halved
  • 1 medium red pepper, quartered
  • 1 medium green pepper, quartered
  • 1 medium yellow pepper, quartered
  • 6 small onions, quartered
  • 3 small zucchini, chopped
  • 8 baby yellow squash, halved
  • 1½ tbsp olive oil
  • 1½ tbsp hot chili sauce
  • 2 tspn cracked black pepper
    For garlic sauce :
  • 2 cloves garlic, chopped
  • ½ cup sour cream
  • 2 tbsp cream
  • ¼ cup firmly packed fresh basil leaves
  • 2 tspn hot English mustard
  • 1 tbsp hot water

Preparation and Cooking Instructions

  1. Combine garlic and vegetables with combined oil, sauce and pepper in large bowl; mix well.
  2. Spread vegetable mixture in single layers into 2 baking dishes. Bake, uncovered, in moderate oven about 40 minutes or until vegetables are tender, stirring twice during cooking. Serve with garlic sauce.
  3. To make garlic sauce : Blend or process all ingredients until smooth.
