Salmon in fruit and nut sauce

Ingredients :
- 4 salmon steaks
- 2oz butter
- 5oz Muscat grapes
- zest and juice of ½ lime
- 1oz toasted almonds
Preparation and Cooking Instructions :
- Heat the butter in a frying pan. Add the salmon and fry for 1 minute
each side. Reduce the heat and cook for 3 - 5 minutes a side or until
just cooked. Transfer the salmon to a dish, cover and keep warm.
- Peel and halve the grapes, remove pips. Stir the lime juice and zest
into the pan. Add the grapes, cook gently for 2 minutes. Stir in the
almonds. Season to taste. Cook for a further minute.
- Pour the sauce over the steaks, garnish with fresh coriander and lime
wedges and serve.
