Salmon and Cucumber flan

Ingredients :
- 2 fl oz white wine
- 2 tspn gelatine
- 3½ fl oz plain yogurt
- 3½ fl oz mayonnaise
- 1 tbsp finely chopped fresh dill or ½ tspn dried dill
- 8 oz cooked salmon, flaked
- ½ cucumber, peeled, seeded and cubed
- 7" cooked pastry case
- lettuce leaves and cucumber slices, to garnish
Preparation and Cooking Instructions :
- Pour the wine into a small bowl and sprinkle on the gelatine. Place
the bowl over a pan of simmering water to dissolve the gelatine.
- Combine the yogurt and mayonnaise. Season well, stir in the dill,
the wine and the gelatine. Add the salmon and cucumber and mix well.
Spoon into the pastry case and leave to set. Garnish with the lettuce
leaves and cucumber slices.
