San Diego sauce

Ingredients :

  • 3 red cascabel chilies
  • ¼ cup olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1½ lb tomatoes, peeled, seeded and chopped
  • 2 tspn oregano leaves

Preparation and Cooking Instructions

  1. Seed and dice the chilies and mix with ½ the oil. Marinate for 1 hour. Heat the remaining oil in a saucepan. Sauté the onion and garlic until tender.
  2. Drain the marinade and mix the chilies with the onion. Add the tomatoes and the oregano. Reduce heat to medium and simmer until the sauce has thickened. Use as required
  3. Cooks notes : This sauce will keep for up to 10 days if refrigerated.
