Ingredients :
- 3 red cascabel chilies
- ¼ cup olive oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1½ lb tomatoes, peeled, seeded and chopped
- 2 tspn oregano leaves
Preparation and Cooking Instructions
- Seed and dice the chilies and mix with ½ the oil. Marinate
for 1 hour. Heat the remaining oil in a saucepan. Sauté the onion
and garlic until tender.
- Drain the marinade and mix the chilies with the onion. Add the tomatoes
and the oregano. Reduce heat to medium and simmer until the sauce has
thickened. Use as required
- Cooks notes : This sauce will keep for up to 10 days if refrigerated.
