Ingredients :
- 8 cooked Balmain bugs
- 1 cup shredded lettuce
- 1 small red Spanish onion
- 1 long thin green cucumber, thinly sliced
- 1 small red apple
- 1 tbsp lemon juice
for Cocktail Sauce :
- 2 tbsp mayonnaise
- 1 tbsp cream
- 1 tbsp tomato sauce
- ¼ tspn Worcestershire sauce
- ¼ tspn Tabasco sauce
Preparation and Cooking Instructions :
- Remove flesh from Balmain bugs, cut each piece in half lengthwise.
Place lettuce, onion, cucumber, apple and flesh in 4 serving dishes,
sprinkle with juice and top with sauce just before serving.
- For Cocktail Sauce : Combine mayonnaise, cream and sauces in
small bowl.
- Cooks notes : Cocktails, without sauce, can be prepared up
to two hours ahead ; sauce can be prepared several hours ahead. Keep
both, covered, in the refrigerator.
