Balmain Bug cocktails

Ingredients :

  • 8 cooked Balmain bugs
  • 1 cup shredded lettuce
  • 1 small red Spanish onion
  • 1 long thin green cucumber, thinly sliced
  • 1 small red apple
  • 1 tbsp lemon juice
    for Cocktail Sauce :
  • 2 tbsp mayonnaise
  • 1 tbsp cream
  • 1 tbsp tomato sauce
  • ¼ tspn Worcestershire sauce
  • ¼ tspn Tabasco sauce


Preparation and Cooking Instructions :

  1. Remove flesh from Balmain bugs, cut each piece in half lengthwise. Place lettuce, onion, cucumber, apple and flesh in 4 serving dishes, sprinkle with juice and top with sauce just before serving.
  2. For Cocktail Sauce : Combine mayonnaise, cream and sauces in small bowl.
  3. Cooks notes : Cocktails, without sauce, can be prepared up to two hours ahead ; sauce can be prepared several hours ahead. Keep both, covered, in the refrigerator.
