Barramundi Malay Style

Ingredients :
- 5 or 6 chilies
- 3 tbsp vinegar
- 1 tbsp oyster sauce
- ½ tbsp garlic
- 1 tbsp fish sauce (optional as a substitute for salt)
- salt & pepper, to taste
- 2 coriander roots
- banana leaves
- 4 pieces barramundi at 180 - 200g each
- plain flour
- oil
Preparation and Cooking Instructions :
- As with a lot of recipes the heat factor is a matter of taste so vary
the chilies and seasoning to suite you palate.
- To make the sauce blend the chilies, vinegar, oyster sauce, garlic,
fish sauce and or salt , pepper and coriander roots.
- Make sure your barramundi fillets are evenly thick and lightly cover
with the plain flour. Turn on hot plate (make sure it’s nice and hot),
add oil and cook barramundi on one side.
- Put banana leaf on hot plate and place turned fillet on top. Add a
portion of the sauce to the fish, wrap in banana leaf and leave to cook
through for approximately 5 minutes.
